Fried Rice


3 cups cooked rice
2 tblsp sesame oil
1 small yellow or white onion, chopped
1 cup frozen peas and carrots, thawed
3 Tablespoons soy sauce
2 eggs, lightly beaten


You should cook your rice and store in refrigerator at at least 8 hours ahead of time. When you are ready to make your fried rice, remove the rice from the refrigerator and break it apart so it has nice, loose rice grains then set aside.

Heat sesame oil in a large skillet or wok to medium heat. Add onion, peas and carrots and cook until onion is tender.

Scoot the vegetables to the side, then pour the eggs onto the other side. Scramble the eggs breaking them up well as you cook then mix the eggs with the vegetables

Add rice to the mixture and add soy sauce. Stir and fry the rice mixture until well heated and thoroughly combined.
