PaPa’s Old Fashioned Skillet Cornbread



1 cup All purpose flour
1 cup Cornmeal
4 teaspoons Baking powder
1/4 teaspoon Salt
2 Eggs


Preheat oven to 425 f

Heat a cast iron skillet with just enough oil to barely cover the bottom.

Mix flour, cornmeal, baking powder and salt until well combined

In a separate bowl lightly beat eggs.|

Pour egg into flour mixture then gradually add milk. You only want to add enough milk to make your batter a consistency of thick gravy. I really need to measure this at some point so I can give you more accurate measurement. I have always just eyeballed it though. I will update this when I get a true measurement.

Pour mixture into heated skillet – it should sizzle – this is going to give you the nice crisp bottom.

Place skillet in oven and cook for 20-25 minutes until top is a nice golden brown.
