Sweet Potato Casserole

INGREDIENTS:

3 tablespoons unsalted butter, melted,
3 cups mashed sweet potatoes
1/4 cup milk
1/4 cup brown sugar, packed
1 teaspoon pure vanilla extract
1/2 tsp nutmeg – this is approximate – I add to taste
1/2 tbsp cinnamon –this is approximate – I add to taste
2 large eggs
Mini marshmallows
chopped pecans or walnuts -optional

Mix the butter, mashed sweet potatoes, milk, brown sugar, vanilla, cinnamon and nutmeg in a large bowl. Before you add the egg taste test and add nutmeg and/or cinnamon as needed for your personal taste.

Once you have reached the desired taste add the eggs and mix well.

Spoon into a baking dish.

Place dish in oven uncovered and bake 25 to 30 minutes.

Remove from oven and set oven to broil

Sprinkle marshmallows evenly over the top (you can also add chopped pecan or walnuts this time) then place back in over and broil just until marshmallows turn puffy and a golden brown.

Remove and serve warm
