Pa-Pa’s Cream of Potato Soup

Ingredients:

6 Large potatoes (diced)
1 Medium onion (finely chopped)
3/4 cup flour
3/4 cup Margarine or butter
1 ½ teaspoon salt
6 cups Milk
Pepper to taste
Shredded cheese of choice
Bacon bits
Green onions

DIRECTIONS:

Boil potatoes until done but still slightly firm.

In a separate pan large enough to hold the milk and potatoes when added, melt butter or margarine.

Add onions and cook in butter on medium heat until translucent.

Blend in the flour, salt, and pepper and cook until only slightly browned. (It will be very thick and pasty)

Add milk all at once. It will be very clumpy due to the butter reforming – stir constantly the butter and flour mixture will begin to incorporate with the milk.

Continue stirring until mixture starts to thicken.

Drain potatoes and add to milk mixture

Serve garnished with shredded cheese, chopped green onion and bacon bits.
