Soft Oatmeal Cookies

Preheat oven to 375 degrees Fahrenheit

Ingredients:

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats
Handful of coconut (optional)

Cream together butter, white and brown sugar

Beat in eggs one at a time, then stir in vanilla.

In a separate bowl mix flour, baking soda, salt, and cinnamon.

I find it easiest to use a hand mixer with the dough attachments for the next part.

Stir flour mixture into the creamed butter mixture.

Mix in oats.

Can also mix in a handful of shredded coconut if desired.

Line cookie sheet with parchment paper.

Spoon dough into walnut sized clumps onto cookie sheet about 2 inches apart. I generally get a dozen cookies per sheet.

Bake for 10-12 minutes in preheated oven.

They will appear not done and insanely soft in the middle. Trust me, they are done this is just the nature of hot oatmeal cookies. They set as they cool

Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
